Beets!


The secret to loving beets is to pair it with goat cheese and something crunchy like lettuce.One of my favorite salads is a cool beet salad with goat cheese. Here is what I do.

Purchase a bunch of fresh beets from the local farmer's market or grocery. Trim off the tops. These can be cleaned and flash sauteed in a pan separately as a bonus if you like. Lightly scrub the beets and boil them with skins on until a fork pierces the skin easily. Allow them to cool.  Beets can make your fingers pink, so I suggest stabbing one from the side near the top with a fork. Place it on a cutting board, scrape off the skin with a pairing knife, and thinly slice one whole cooked beet.

Place some mixed lettuce greens in a bowl. Top with slices of goat cheese and then beets to your liking. Grind some fresh pepper on top. Lightly drizzle with olive oil and a ribbon of cremea Balsamic vinegar. Be sure each bite has a bit of greens, cheese, and beets together for a complex mouth feel of soft and crunchy, salty and sweet.  Enjoy!
